spinach grilled cheesie w red pepper tomato soup

ingredients:

- 2 slices of bread
- 1/4 cup frozen spinach (thawed & squeezed dry)
- 2 slices of cheese (cheddar and/or mozzarella but whatever you like is fine)
- butter for spreading
- 2(?) cups tomato/roasted pepper soup

directions:

1. thaw frozen spinach and squeeze out extra water or u risk a soggy sandwich
2. butter one side of each bread slice
3. place one slice (butter-side down) in a pan on medium heat
4. add cheese + spinach + more cheese (think of it like a glue that will hold it all together)
5. top with the second slice, butter side up
6. grill until golden and melty on both sides (if u have a lid i like to throw in 3-4 droplets of water in the pan then cover for about 30 seconds so it creates a steam that melts the cheese)
7. heat up the tomato soup in a small pot or microwave
